At their late summer Tomato Workshops Todd and Jordan Champagne of Happy Girl Kitchens will show you how to preserve your own tomatoes using four different recipes.
After an hour-long introductory talk covering the basics of food preservation (including topics of hot water bath canning and the PH scale), you'll head into the kitchen to get to work making some of their reknowned salsa and spicy tomato juice. You'll be shown how to preserve whole heirloom tomatoes and dry-farmed tomatoes in a brine solution and then sit down to a sumptuous organic lunch.
