Here's a subtle salad inspired by Ayurvedic scholar and Food Guru Harish Johari.
Ingredients: 4 tablespoons extra virgin olive oil 2 teaspoons Meyer lemon juice 2 teaspoons fig balsamic vinegar The juice of 2 medium oranges 1 teaspoon sea salt Freshly ground black pepper to taste 8 medium carrots, grated 4 medium apples grated In a small bowl, combine oil, juices, salt, pepper & vinegar. In a big bowl place carrots and apple and mix with the dressing. Marinate for an hour in the refrigerator. Serves 4
